Regrow an Onion From a Sprouted Bulb: What the Water Trick Actually Gives You

A pantry onion that's already sending up a green shoot will keep growing in a glass of water. What it will not do is give you back a second onion: the bulb feeds the shoot and shrinks as it goes. Here's the honest split between the two, and why it's a different trick from regrowing green onion scraps.

A Green Shoot, Not a Second Onion

A bulb onion sitting in the pantry that starts pushing a green shoot up through its top still has enough stored energy inside to keep that shoot growing, even with no soil at all. Peel back the dry outer skins to expose the firmer, paler root plate at the base, stand the bulb root-end down in a glass of water, and the shoot keeps climbing. What you will not get back is a second onion bulb. The one you started with is the fuel, and it visibly shrinks and softens as the shoot uses it up.

Why the Shoot Keeps Growing at All

Per Clemson Cooperative Extension's HGIC 1314 factsheet on onions, a bulb onion (Allium cepa) is built from compressed, thickened leaf bases layered around a central growing point, the same structure that would have sent up leaves and eventually a flower stalk if the bulb had stayed in the ground through its dormant season. That stored reserve is exactly what a sprouting pantry onion is running on: no root system, no soil, just the bulb's own layers being consumed from the inside to push the shoot upward. Water and a little light are enough to keep that process going, they don't add anything the bulb didn't already have.

What Actually Comes Back, and What Doesn't

This part is my own kitchen observation, not from the Clemson factsheet, since that source covers growing onions from seed and sets, not regrowing a sprouted one in water: the green shoot itself turns into a usable, scallion-like green top within about a week once it's standing in water, good for the same cooking uses as a green onion top. The bulb underneath does not re-firm, does not grow a fresh outer skin, and does not get bigger. It gets visibly softer and smaller the longer the shoot keeps drawing on it, and it never resumes bulb growth on its own once cut off from soil and roots. Treat the shoot as the entire payoff.

Not the Same Trick as Green Onion Scraps

It's worth being precise about which "regrow an onion in water" trick you're actually doing, because there are two, and they behave differently. A green onion (scallion) root end is already exposed and ready to root as soon as it's cut, and a healthy one supports 2-4 real regrowth cycles of fresh green shoots before it's spent, since it's regrowing from an intact root system, not consuming a stored bulb. A sprouted pantry bulb onion is a different mechanism entirely: no roots to begin with, no repeat cycles, one shoot grown at the direct cost of the bulb it came from, and then it's done.

What This Is and Isn't Worth

Worth doing: if a pantry onion is already sprouting and headed for the compost anyway, standing it in water for a week of usable green tops costs nothing and rescues something you'd otherwise throw out.

Not worth doing: buying onions specifically to sprout them this way, or expecting the bulb to recover and be usable afterward once the shoot is done. By the time the green top is worth cooking with, the bulb itself is soft, shrunken, and not worth saving.

Will the bulb grow back after I use the green shoot?

No. Per Clemson HGIC 1314, a bulb onion's growth comes from stored, compressed leaf-base layers, not an active root system while it's sitting on a counter or in a glass of water. Once those reserves are spent pushing up the shoot, the bulb has nothing left to regrow itself with. Expect it soft and shrunken, not restored.

How is this different from regrowing green onions in water?

They're different alliums doing different things. A green onion (scallion) root end is already exposed with an intact root system and genuinely regrows 2-4 cycles of fresh green shoots. A sprouted pantry bulb onion has no root system to start from; it's spending the bulb's own stored reserves to push one shoot, once, and then it's done.

How long until the shoot is actually usable?

This is my own kitchen observation, not a sourced figure, since Clemson's factsheet doesn't address scrap regrowth: about a week of standing the peeled bulb root-end down in water produces a green top long enough to use the same way you'd use a scallion green.

Can I replant the sprouted bulb in soil instead of water?

You can, and the shoot will likely keep growing either way, but neither the Clemson source nor my own experience suggests the bulb itself recovers. Soil doesn't restore leaf-base reserves the bulb has already spent; it's still one shoot at the bulb's expense, just grown in dirt instead of a glass.
