Cut off what you need for cooking, drop the root end in water, and it will send up new green growth within days. The part that gets skipped in most quick-tip posts: it doesn't regrow forever. A healthy root end typically supports 2-4 regrowth cycles before the base runs out of stored energy and vigor drops off, not the "endless free green onions" some kitchen-hack posts imply. After that, the shoots come back thinner and slower each time, the same diminishing-returns pattern as most food-scrap regrowth, just with more rounds in it than celery's one.
Step 1: Check the Root End Before You Bother
Not every trimmed base is worth saving, and the difference is visible before you even start:
- Good candidate: The root nodule (the little disc the roots grow from) is intact, pale, and not heavily discolored, with root threads still attached across the whole base. This is what regrows reliably for multiple cycles.
- Marginal candidate: The nodule has started to darken or dry out, though a few root remnants remain. It may still root, but budget for one regrowth cycle only, not several.
- Not worth it: No root nodule at all, or the base was sliced clean through it. This piece will not regrow no matter how long you leave it in water. Compost it and use a different bunch next time.
Cut roughly 1 to 1.5 inches of the white base above the roots. Shorter pieces (down to about an inch) still work but tend to produce weaker regrowth than the slightly longer cut.
Step 2: Water, Not Soil, to Start
- Stand the trimmed bases root-down in a small glass of cool water, in a spot with good light (a bright windowsill is fine here; this is a different situation from tomatoes, where direct heat and light cause problems).
- Keep the cut tops out of the water; only the root end needs to be submerged.
- Change the water daily, or at minimum every other day. Cloudy water means bacterial buildup, and that's the single most common reason a viable root end fails to regrow. This is a small daily habit, not a one-time setup.
- New growth is visible within 3-5 days: the cut end forms a slight dome, then splits as new green shoots push through. Expect roughly a week before you have two usable stalks (one still carrying the old cut tip, one fresh) long enough to harvest from or transplant.
Step 3: Harvest Again or Move to Soil
At around the one-week mark you have a real choice, not just one path:
- Keep harvesting from water: Snip what you need above the original cut and let the base keep regrowing in its glass, refreshing the water as before. This is the lower-effort option and it's where the 2-4 cycle count applies most directly, each cycle a bit weaker than the last.
- Transplant to soil: Move the rooted base into a pot or bed, roots down, once you see a decent tangle of new root growth. In soil, plants spaced about 2 inches apart stay slim, scallion-style stalks; spaced closer to 6 inches apart they'll bulk up and grow larger, closer to young leeks in size and slightly tougher in texture, still fine for cooking.
Either path draws down the same finite reserve in the root end. Soil generally gets you a more substantial plant per cycle; water is faster to repeat and needs no potting mix on hand.
The Honest Numbers
- 2-4 regrowth cycles from a healthy, intact root end before vigor noticeably drops. This is a real-world grower's account (Epic Gardening/Sarah Jay), not a controlled study, so treat it as a solid working expectation, not a lab-verified constant.
- 1 cycle only from a root end with a discolored or partly dried nodule. Still worth trying since the alternative is the compost bin anyway, just don't expect a second round.
- 0 cycles from a base with no root nodule left. No amount of water time fixes this; check before you bother.
- 3-5 days to visible new growth, about 1 week to two harvestable stalks, from a good root end in fresh, regularly-changed water.
