Stand a leek's cut root end in water and it genuinely sprouts new green growth within a week or two. What it won't do is rebuild the thick white shaft that made it worth buying in the first place. Here's the honest split, with the two real extension sources on what an actual leek needs, and what a windowsill glass can't provide.

One Regrowth, and It Isn't a Second Leek

Cut the root end off a leek, an inch or so of the white base with the roots still attached, stand it in a shallow glass of water on a sunny sill, and new green shoots do come up from the center. That part is real and quick. What comes up is not a second leek, and this guide splits those two outcomes apart before you get your hopes up.

Why the Regrowth Part Works

A leek's root base still has living tissue at its center, the same growing point that would have kept sending up new leaves in the ground. Give it water and light and it does what it was always going to do: push new green growth. Change the water every day or two so it doesn't turn cloudy, and expect visible new leaf tips within one to two weeks in my own kitchen.

Why It Never Becomes a Real Leek Again

Here's what an actual leek needs, per two real university extension sources. Clemson HGIC's factsheet on leeks describes them growing to "edible 6- to 10-inch long, white stems as much as 2 inches in diameter," and taking "about 120 days from seed to maturity." University of Minnesota Extension's leek guide agrees on the timeline, about "120 to 150 days," and is specific about what a finished leek looks like: "a firm, white shaft more than three inches long," with swelling at the base ("bulbing") called out as a defect, not a goal.

Both sources describe how that white shaft gets there: it's built by mounding soil or planting in a furrow and gradually filling it in around the growing stem, called hilling, which blocks light and keeps the lower stem pale and tender over that entire 120-plus day growing season. A cut root base standing in a glass of water gets none of that: no soil, no blanching, no months of stem growth. In my own experience regrowing leek bases this way (my own observation, not from either extension source, since neither addresses scrap regrowth at all): what comes back is thin, green most of the way down, and behaves like a mild scallion, not a second leek. It's a genuine "use it once more before the compost" trick, the same shape as celery's single honest regrowth flush, not a repeat-harvest method like green onions.

What This Is and Isn't Worth

Worth doing: standing the base in water for a week or two of extra green stalk to snip into soup or eggs before it's spent. It costs nothing and the scrap was heading to the compost bin anyway.

Not worth doing: expecting a full white-shafted leek to grow back, or replanting the base in soil hoping it will rebuild that shaft on its own. Neither extension source above describes that outcome, and my own repeated attempts have never produced one. If you want an actual leek, that's a 120-to-150-day, from-seed, hilled-in-soil project, not a kitchen-counter one.

Can I replant the base in soil instead of water?

You can, and it may root a little more solidly, but neither extension source suggests this rebuilds a harvestable white shaft, and in my own experience it hasn't. Treat any soil-planted base the same way as the water version: a source of extra greens, not a second leek.
